I am running simulations on F1 cars as part of a high school research project. Is there any way to quantify uncertainty produced during simulations? Any parameters in post-processing which can help do that?

In general the answer is yes - there are ways to quantify uncertainty in simulations. A good source for this purpose would be Versteeg & Malalasekera’s “An Introduction to Computational Fluid Dynamics”, chapter 10, I believe.
This article explores some of the types of errors discussed in the book.
